Soul food Sunday #1

Hello!

Thanks for stopping by. So, as the title may suggest, this is the first of my Soul Food Sunday blog posts.

Nobody could ever accuse me of being a chef or even a good cook, the idea behind the Soul Food posts is just to show some of the things that I now eat, there's nothing fancy infact most of it is simple and easy to prepare, but it's helped me to lose more than 7 stone since last January, while still eating REAL food.....and chocolate!

Some of you are already on the Slimming World plan, hopefully this might give you a couple of new ideas or just remind you of some meals you haven't had in a while, if you've not yet taken the plunge and joined Slimming World it's never too late, click here to find out where your nearest group is, and check for membership offers, meal plans etc!

 

Tikka Stuffed Mushroom

You will need

Huuuuuuuuge mushrooms

A pepper

Linda McCartney vegetarian red onion and rosemary sausages (I use these a lot, very tasty)

Slimming World Tikka Masala sauce from Iceland

Be sure to take the sausages and tikka out of the freezer to thaw ahead of time, I leave mine in the fridge overnight.

Mix tikka and the sausage together and quite simply stuff the mushrooms!

Add sliced pepper, and a sprinkle of mixed herbs if desired, into a Pyrex dish in the oven for 30 minutes.

Done!

Maybe try adding some chopped onion and tomato to the tikka too.

  2. Looks lovely Maria. I am not a huge Tikka fan but I guess you could use a different sauce? I went and joined last Thursday (yes New Year's Eve!!) - I don't want this to be my NY resolution so went before Jan started. I have made Cottage Pie - 4 portions, Tomato Lentil and Veg soup - three portions and Easy Beef Stew - 3 portions - Lunch all week sorted and some. 2016 is sooooo gonna be my year!! See you soon. xx

  4. Yummy that looks tasty. You really are amazing. I'm no great shakes in the kitchen so simple and no faff suits my cooking skills. Is there a slimming version of dumplings? We like curries too.I could do with losing 1 1/2- 2 stone if I'm honest. Need to get motivated and organised x

  7. I love these sausages, never thought to try stuffing mushrroms with them, don't like tikka but could use something else to bind it.

  11. I adore those sausages, so tasty. I also like the low fat cumberland ones from Sainsbury's they make a lovely scotch egg, low syn. Will try your idea. xx
